What a unique dish! I never would have thought to add this variety of seasonings to cucumbers. Refreshing and savory this recipe makes a good side to Chicken Kabobs. I would however recommend leaving some time between prepping and serving this dish so that the seasonings have a bit of time to soak into the cucumbers.
Makes 16 Servings
Preparation Time: 10 minutes + an hour or so for them to sit before serving
Cost: $4
Ingredients:
*4 cucumbers
*1 small onion, finely diced
*1 teaspoon chaat masala
*1/2 teaspoon red chili powder
*Flaked sea salt, to taste
*Cilantro, small handful finely chopped
*1 lime, quartered, to serve
Preparation:
*Peel and halve the cucumbers.
*Slice the cucumber into sticks and dry them thoroughly with paper towel.
*Place the finely diced onions in a bowl, and cover with cold water. Let sit for about 15 minutes, then drain and pat dry. (This helps draw out the raw spiciness of the onions and mellows out their flavor).
*Place the cucumbers on a serving plate and sprinkle with onions, chaat masala, chili powder and salt.
*Garnish with the chopped cilantro and squeeze a little lime juice before eating.
