I have always enjoyed asparagus, however, this preparation takes the gold. The lemon and garlic balance wonderfully to make a side dish that perfectly matches the richness of the beef wellington. Every bite of the asparagus was delicious and the leftover olive oil and lemon on the baking sheet made a great sauce. A quick to throw together vegetable dish, this recipe is going to be a household staple in the future.
Makes 4 Servings
Preparation Time: 10 minutes
Cook Time: 14 minutes
Ingredients:
*1 pound asparagus (medium sized shoots)
*1 teaspoon Himalayan sea salt
*1 teaspoon freshly cracked black pepper
*The juice of 1 medium lemon
*1 clove garlic, minced
*1 tablespoon olive oil
Preparation:
*Preheat oven to 425F.
*Trim the woody, tough ends off the asparagus and lay them out in a single row on a baking sheet or cutting board.
*Drizzle with the olive oil, season with the salt and pepper, and sprinkle with the lemon zest, juice and garlic.
*Roll around gently on the pan to ensure the asparagus are all evenly covered.
*Bake at 425F for 14 minutes in oven.
*Serve warm or chilled.
