Preparation Time: 30 minutes
Ingredients:
*1 lb. roasted chicken breast, thinly sliced *10 slices of challah bread or French baguette, lightly toasted *1⁄4 cup mascarpone or cream cheese *2 cups shredded red leaf lettuce *1⁄4 cup pickled PawPaw Peppers or pepperoncini peppers, thinly sliced
*1⁄2 cup cranberry sauce, your favorite jar brand
Preparation:
*Cut bread and toast on broil in the oven until brown. *Divide mascarpone evenly between the slices of toasted bread and spread it to the edges of each slice.
*Arrange some of the shredded lettuce on top of each slice. *Slice chicken into desired thinness and place on toast. *With a teaspoon, add cranberry sauce on top of the sliced chicken. *Sprinkle sliced peppers on top of the toast. *Cross-cut each toast. *Serve and enjoy!
